Chinese Executive Chef Mok Kit Keung of the Michelin two-star Shang Palace restaurant at Kowloon Shangri-La, Hong Kong, sister property of Shangri-La's Far Eastern Plaza Hotel, Taipei, will be in Taipei until July 22, 2012. A special set menu features seven-courses and is matched with five selected champagne, red and white wines from France; it is priced at NT$8,888 per person. The menu includes Braised Pacific Lobster and Crispy Rice with Prime Sauce, Deep-Fried Crispy Pigeon in a Taro Nest, Braised Whole Abalone with Homemade Bean Curd, GrilledAustralian Wagyu Rib Eye with Bean Curd Crumbs, and Red Bean Pudding with Bird’s Nest and Baked Chestnut Puff. Wines selected to match the dishes include Deutz Brut Classic, Reims, France, Robert Parker 90, Domaine Robert Sirugue, Bourgogne, Pinot Noir, France 2007, Château Haut-Brisson, St Emilion Grand Cru, France 2006, Robert Parker 89, and Château Haut-Brisson, La Réserve, St Emilion Grand Cru, France 2005, Robert Parker 92.
The three limited set menus – The Golden Luxury, The Silver Sumptuousness and The Rouge Opulence – are priced at NT$5,688, NT$3,688 and NT$2,688 per person respectively. Many dishes found in the menus highlight Chef Mok’s strength in featuring his personal artistic and modern touch to presentation. Examples include Braised Superior Bird’s Nest with Fish Maw and Crab Roe served in Steamed Pumpkin, and Chef’s Special Fried Rice with Scallops served in a Golden Cup. The unique “golden cup” is shaped with deep-fried spring roll skin; the rim of the cup is neatly adorned with black and white sesame, which is joined using egg white.
Chef Mok is from Hong Kong and entered the industry at the age of 14, and now he has over 35 years of experience. Yet, even with such breadth of culinary knowledge, Chef Mok continues to learn every day from various cookbooks and recipes; he obliges himself to come up with two new creations every week.
Prior to being appointed the executive Chinese chef of the Michelin-starred Shang Palace in Kowloon, Hong Kong, Chef Mok worked in Singapore for 20 years at several prestigious establishments, international luxury hotels and convention centers, such as Raffles Hotel, Suntec International Convention and Exhibition Center, and Marina Bay Sands.
Over the years, Chef Mok has received a number of culinary accolades, including the Gold Medal Award in Chinese Cuisine from the Restaurant Association ofSingapore in 2001 and 2004, the Gold Medal Award in the Food Hotel Asia 2008 Imperial Challenge, and numerous other recognitions.
Chef Mok has served many well-known public figures, including former Prime Minister of the Republic of Singapore Lee Kuan Yew and his son Lee Hsien Loong, His Majesty King Mohammad VI of Morocco, President of Russia Vladimir Putin, movie stars Jacky Chan and Gong Li, and singer Jay Chou. According to Chef Mok, after His Majesty King Mohammad VI returned to Morocco, he placed a special request to invite Chef Mok and his family to Morocco as a private chef for two weeks.
